This is sooo good – found this little recipe online – sooo delish – its so moist and lemony! Just for goodness sake be careful with the measurements when i made this I accidentally mixed up my measuring cups and put 3 x 1/2 a cup in instead of 3 x 1/4 of a cup -DOH still tastes nice, just very very sugary….diabetes anyone?
GOOEY LEMON SLICE
1 1/2 cups flour
3/4 cups caster sugar (for crust)
150g butter, cubed
4 large eggs
1 3/4 cups caster sugar (for filling)
finely grated zest of three lemons
2/3 cup lemon juice (from 4-5 lemons)
1/3 cup plain flour
icing sugar to dust
1. Preheat oven to 180c. Line a 20 x 35 cm tin with non-stick baking powder.
2. Place flour and sugar into the bowl of a food processor, pulse to sift. Add butter and process to resemble fine breadcrumbs. Place crumbs evenly over base of prepared tin cake for 15 minutes until golden. Remove, reduce oven to 140C.
3. For the filling, whisk the eggs and sugar together until very thick and pale. Fold in lemon juice, zest, then flour. Pour over crust and bake for 40 minutes or until set.
Cool completely before cutting into squares. Serve dusted with icing sugar. Makes 12 squares.
