This is a Chocolate layer cake with a coconut layer in between, my mum used to make this for our birthday when we were young (before she got sick with Coelic disease!) Soooooo good like a fluffy yummy bounty bar!
Ingredients:
200gms Butter
2 eggs
1 and 1/2 cups brown sugar lightly packed
1 and 1/2 cups self raising flour (if you just have normal flour add about 1.5 tsp baking powder)
2 tablespoons of coca
1 and 1/2 cups desiccated coconut
2 tablespoons icing sugar
1/2 cup milk
Method:
Cream butter and Sugar until light add eggs then sifted flour and cocoa
Spread half the mix into a greased 20cm ring tin
combine coconut icing sugar and milk mix well and spread evenly over cake mix
using a warm spatula to spoon remaining cake mix over the coconut filling
bake 180 degress about 45 mins
Leave in tin ten mins before turning out
Ice with chocolate icing if desired and spread with coconut
